Classic Game Room is pretty good as is The Gaming Historian.. fascinating stuff on his channel.
For a very funny, but definitely NSFW channel, Michael from RageQuit.
I have my own too, but faaaar from professional, as its shot and edited using a tablet, haha

It's not a gaming channel, but BlackNerdComedy just about rocks :). He talks about anything series, movie or gaming related in a comedic way and he does a great voiceover for Krang from the turtles :p.

meltheofcgamergirl - she does pick up videos, game reviews, lets play, and a lot of her channel is her trying weird foods with her friend Leah.

Joe Gagne's Funtime Pro Wrestling Arcade - Reviews Professional Wrestling Video games.

I discovered a couple more channels this week I figured I'd share with everybody here.

VintageGameVikings - they do a lot of Let's Plays and they have a Game Hunting Video called "Rape and Pillage". I hope they make it into a regular series because these guys are pretty vulgar and funny.

TheBrotherNights - they do first impressions videos on NES Games and rate them at the end. They also drink beer.
