Galactic Battlegrounds is Age of Empires II with Star Wars armies. Every time I tried to play Empire at War, I'd always just come back to this game.

Bounty Hunter is like Jedi Knight with gadgets instead of force powers (and no lightsaber). I like to think of it as the spiritual successor to Dark Forces.

Here's an even more forgotten gem. I would not even be able to justify putting Battlefront on my list without including a better game that actually preceded it. The Galactic Conquest mod for Battlefield 1942.
